Lemon Aspen

Lemon Aspen is found in tropical and tableland forests of northern Queensland, up towards Cape York.

A pale lemon coloured fruit about 1.5 – 2.5cm in diameter with a tough star shaped core – textured much like an apple core. The core often contains very small black seeds and the thin flesh is spongy. The fruit exudes an incredible tropical citrus aroma (much more so when fresh) and a very strong acid flavour of lemon and tropical spice characters.

Lemon Aspen has a wonderfully tart lemon taste with a hint of grapefruit. It works well with Quandongs and Muntries. They need to be picked slightly underripe.

100g of lemon aspen equals something close to the juice, zest and pulp of about 6 large lemons

Lemon Aspen Aioli
Blend 2 garlic cloves, 1 teaspoon Artesian Salt, 2 egg yolks, 2 tablespoons water, 2 tablespoons lemon aspen juice, 2 teaspoons Outback Pride Pepperleaf Honey mustard
Then slowly add 1 cup Oz Tukka Macadamia Nut oil
Excellent with prawns or crudites
